25 Essential Rhythms for Middle Eastern Drumming: by Uncle Mafufo.  Understanding these rhythms is really a must for serious dancers.

Obviously there's a lot of great music out there, but these albums will give you a nice, solid base to work from.  If you hear something great in class, always ask your teacher what it was and where she got it.
